How Beautiful Is This, Healthy Dining At It’s Best!

8 Romaine leaves
2 cups grape tomatoes, halved
1 yellow squash, diced
1 1/2 cups carrots, shredded or swirled
1 corn on the cob, husk removed
2 cups cucumber, diced
1 shallot, sliced thin
1 cup Edamame
1 cup snow pea sprouts
5 small cooked beets, quartered
1 cup Robusto cheese, diced
preheat grill on high and grill corn for 4-5 minutes, rotating occasionally. Remove kernels from the corn and set aside to cool. Trim the base of the Romaine leaves. Put each leaf end to end with it’s pair, overlapping to create a boat (will yield 4 boats). Add each remaining ingredients equally in the center among the boats and serve with your favorite dressing.
