Ingredients
1 large red potato, sliced thin
5 eggs
1/4 cup cream
3/4 cup fresh tomatoes, diced
1/4 cup onion, minced
1 tsp parsley, minced
1/4 tsp garlic powder
1 tbsp butter
1 tbsp olive oil
salt
pepper
Cooking Tools
6 or 8 inch non-stick oven safe frying pan
Medium mixing bowl
Mandolin


Directions
Preheat oven to 375 Degrees F. Melt butter on medium heat, and layer potatoes in a single layer including sides and overlapping ends. Fry in skillet, do not mix, keep the layer intac. Cook for 10 minutes, then remove from heat. Whisk eggs and cream, then fold in onions, parsley, tomatoes, garlic powder, salt & pepper. Pour egg mixture over top of potatoes and bake in the oven for 20-25 minutes. The eggs should look puffed and set. Remove from oven and let rest for 5 minutes. Place a serving dish on top of pan and invert.
