Ingredients
4 cups baby cucumbers, sliced
1/4 cup red onion or shallot, sliced thin
2 cloves garlic, pressed or minced
2 Tbsp. creamy peanut butter
2 Tbsp. Tahini
1 Tbsp. extra Spicy Chili Crunch (Momofuku) + drizzle
2 Tbsp. Mirin
pinch of sesame seeds for garnish
salt
Cooking Tools
Medium mixing bowl

Directions
Whisk ingredients until smooth, add in the sliced cucumbers and onion slices, toss until well coated.
Salt to taste then put in the refrigerator for a few hours to chill. Serve as a side with some sprinkle of sesame seed and drizzle with some more chili crunch.
