Spinach Salad & Roasted Pears

Makes For A Delicious Pairing!

Cooking Time; 25 minutes

Ingredients

1 large bag baby spinach, rinsed and dried

5 Campari tomatoes, quartered

4 pears, halved and scoop out some of the base.

1 cup chopped walnuts

1 cup chopped caramelized pecans

1/2 cup whole caramelized pecans

1/2 cup Gorgonzola cheese crumbles

1 tsp parsley, minced

3/4 cup pure maple syrup

favorite vinaigrette dressing

Cooking Tools

Parchment lined sheet pan

Small mixing bowl

Directions

Preheat oven to 350 Degrees F. In a small bowl, toss chopped walnuts, chopped caramelized pecans , Gorgonzola cheese, parsley and maple syrup. Place pear halves on a sheet pan and place about 1 tbsp of nut mixture into the pear. bake in oven for 25 minutes, remove and cool. to prepare salad, place spinach in a serving bowl, add tomatoes, whole pecans evenly dispersed. Place cooled pears on top and serve with your favorite vinaigrette .
