Ingredients
1/2 cup olive oil + drizzle
1/2 cup chopped Italian parsley
2 cloves garlic, finely minced
1 tinned anchovy filet, finely minced
1/2 tsp lemon zest
1 tsp fresh lemon juice
1/2 tsp Dijon mustard
1 tsp white wine vinegar (optional)
1/4 cup grated parmesan cheese
Black pepper to taste
Ciabatta bread or Focaccia bread

Directions
In a small mixing bowl, add olive oil and anchovies filet and mix with fork to break down the anchovy. Whisk in the rest of the ingredients except the Parmesan cheese. Place in serving bowl and sprinkle with Parmesan cheese and drizzle with more olive just before serving. Serve with hot sliced Ciabatta bread or bread of choice.
