Dutch Baby

Sometimes Called A German Pancake, A Bismarck Or a Dutch Puff!

Prep Time: 15 Minutes

Cooking Time: 25 Minutes

Ingredients

3 eggs, room temperature 

1/2 cup whole milk, room temperature

1/2 cup flour

2 tbsp sugar

2 tbsp butter

pinch of nutmeg

1 cup assorted berries

powdered sugar

Directions

Place room temperature ingredients, the eggs, milk, flour, sugar and a pinch of nutmeg into the blender and pulse to blend all ingredients. The liquid will be somewhat runny. Preheat oven at 450 Degrees F. and place cast iron pans in the oven to heat. Once iron pans are screaming hot, remove from oven and add 1 tbsp butter into each pan until melted. Pour evenly the the liquid batter into hot buttered pans and immediately place back in oven and bake for 20 minutes, then reduce heat to 300 Degrees F for an additional 5 minutes. Remove from oven and cool slightly before adding fresh berries and dust with powdered sugar. Cook’s Notes If you are using a large cast iron pan, double the amount of ingredients. It is very important to use room temperature ingredients for the edges to rise high.
