Carrot Soup

Difficulty: Easy

Cooking Time: 30 minutes

Ingredients

32 oz. box chicken broth or vegetable broth

5 large carrots, peeled & cut

1 medium onion, chopped

1 orange pepper

4 cloves garlic

1 tsp Thai 7 spice

1/2 tsp cinnamon

1 Tbsp. butter

minced parsley for garnish

salt

pepper

Cooking Tools

Stock pot

Immersion blender

Directions

Place all ingredients in a stock pot and cook until all the vegetables are tender, approximately 30 minutes on medium to medium-low heat. Set aside to use the Immersion blender, carefully blending to not splatter ( a clean dish towel over the pot can reduce hot liquid splattering) Pulse until all the ingredients are puréed. Adjust seasoning to suit your taste. Garnish with minced parsley.

Serves 4-6
