Parsley Buttered Baby Potatoes

Difficulty: Easy

Prep Time: 15 minutes

Cooking Time: 30 minutes

Ingredients
1 1/2 lbs. baby red potatoes
1 1/2 cups chicken stock
1 cup parsley, chopped
1/2 cup green onions, chopped
2 cloves garlic, minced
1/2 stick butter
2 tbsp olive oil
salt
pepper

Large pan/ skillet with lid

Direction
In a large skillet with lid; add potatoes and chicken stock and cook on medium heat with lid on until potatoes are tender, (approx. 20 minutes) and most of the liquid is evaporated.  Add butter, olive oil, green onions, garlic, parsley, salt and pepper to taste.  Cook for additional 8 minutes.
Serves 4-6
