Burrata Blue Agrodolce

Ingredients

1 ball of fresh Burrata

2 cups fresh blueberries

1 small shallot, finely diced

2 Tbsp honey

2 Tbsp balsamic vinegar

1 Tbsp red wine vinegar

1 Tbsp olive oil

1 tsp fresh thyme

salt

pepper

grilled crostini slices

Optional Toppings

chopped pistachio

chopped candied walnuts

chopped basil

Cooking Tools

Medium skillet

Directions

Heat olive oil in a skillet over medium heat. Sauté shallots until softened, about 3 minutes. Add blueberries, honey, balsamic vinegar, red wine vinegar, salt and pepper. Simmer until the blueberries begin to burst, leave many whole, the sauce will become glossy, about 8 minutes. Let the sauce cool to a slight warm temperature, place Burrata on a serving plate and spoon the Blueberry Agrodolce over the top. Garnish with salt & pepper, thyme leaves and serve it with grilled crostini slices.
