Pork Puffy Tacos

Cooking Time: 20 minutes

Ingredients

1/2 pork tenderloin, diced

3-4 cups of chopped lettuce

2 ripe tomatoes, diced

1 cup shredded Mexican mix cheese

2 Tbsp avocado oil

1 packet taco seasoning mix

1 tsp garlic powder

1 tsp onion powder

8 medium tortillas

vegetable oil

salsa

guacamole

lime wedges

Cooking Tools

2 large non-stick pan/skillet

Medium mixing bowl

Directions

In a mixing bowl, toss the diced pork tenderloin with taco seasoning, garlic powder, onion powder. Add avocado oil into a pan on medium heat, put in the seasoned pork tenderloin and cook until done and set aside. In a second pan, add enough vegetable oil to about 1/2 inch deep. Heat oil to a medium-low heat. Add one at time a single tortilla. The tortilla will puff very quickly, cook for about 30 seconds or until golden then flip for additional 30 seconds. Remove from oil and bend in half before its starts to stiffen. lay the tortillas on paper towels to drain excess oil. Repeat for the rest of the tortillas. Make your tacos as a normal taco with rest of the ingredients.
