Peach Cobbler

Difficulty: Easy

Ingredients

5 peaches, peeled and sliced or 1 large bag frozen peaches (thawed)

1 1/2 cups packed brown sugar

1 stick butter

1 tsp vanilla bean paste or extract

1 tsp ground cinnamon

1/2 tsp ground nutmeg

Batter Ingredients

2 cups Bisquick or 2 cups All-purpose flour + 1 Tbsp baking powder

1/2 stick butter, melted

2 eggs

1 cup milk

1 tsp vanilla bean paste or extract

Cooking Tools

Large cast iron pan

Medium mixing bowl

Directions

Preheat oven to 375 Degrees F. In a large cast iron skillet, melt 1 stick of butter and brown sugar and cook and stir on medium-low heat until sugar is melted. Add in vanilla, peaches, cinnamon and nutmeg. Stir ingredients until peaches are just slightly tender (not mushy) then remove from heat. In a mixing bowl, add in ingredients for the batter and whisk until completely smooth (not too thick or runny). Pour batter in a skillet with the peaches, but do not cover up all the peaches, leaving gaps without batter.

Place in the oven and bake for about 50 minutes and the crust is golden brown. Allow to cool to room temperature, the sauce will thicken as it cools.

Serves 6-8
