Chicken Derby Salad

Serve With Toast, Or As A Simple Salad!

Prep Time: 30 minutes
Cooking Time: No cooking required

3 cups cooked chicken breast, cubed
2 cups seedless grapes, halved
3/4 cup onions, chopped
1 green onion, chopped
3/4 cup walnuts pieces
2 celery, sliced thin
2 cups watercress
1 cup mayonnaise
1 tbsp white vinegar

Cooking Tools

Large mixing bowl

Whisk together, mayo and vinegar.  Toss in cooked chicken, grapes, onions, green onions, walnuts and celery.  Mix ingredients salt & pepper to taste.  Toast bread, create a sandwich and top with watercress.
Serves 4
