Crispy Smashed Potatoes

16 baby red potatoes
16 pats of butter
olive oil
garlic powder
dried oregano
dried tarragon

Cooking Tools

Large stock pot

Parchment lined baking sheet 

In a stock pot add potatoes and cold water to cover potatoes and set temperture on high to boil for approx. 30 minutes or longer until potatoes are cooked but not falling apart. Preheat oven to 420 Degrees F. Drizzle oil on parchment lined baking sheet, add potatoes and using a spatula, smash down to flatten potatoes. Drizzle with additional oil and lay a pat of butter on each potato.  Sprinkle each potatoes with garlic powder, dried oregano and tarragon.  Salt and pepper potatoes.  Bake in oven for 30 minutes or until edges are crispy.
