Mortadella & Burrata Sandwich

Ingredients

Focaccia bread

1/2 lb. Mortadella, sliced thin

2 Burrata

Cooking Tools

Small food processor

Directions

In a food processor, add; everything for Pistachio Pesto and pulse until minced, not puréed. Slice Focaccia for 2 servings, Spread pesto on bottom and top of the slices of Focaccia bread, layer Mortadella and sliced Burrata. Any leftover pesto can be jarred and refrigerated for up to 2 -3 days.

Serves 2

Pistachio Pesto

I cup pistachio, shelled

1 cup olive oil

4 cloves garlic cloves

1 tsp fresh rosemary leaves

2 tsp fresh oregano

handful of fresh basil leaves

1/2 cup parsley leaves

1/2 cup Parmesan cheese, grated

1/2 tsp sugar

salt

pepper
