Ingredients
1 package Buckwheat soba noodles
1 1/2 cups Dashi broth = 1 1/2 tsp Dashi granules mixed with 1 1/2 cups water
1/2 cup soy sauce
1/2 cup Mirin
1 tsp sugar
1 tsp wasabi, prepared
1/2 cup green onions, sliced
1/2 cup shredded Nori (seaweed)
ice
Cooking Tools
2 medium pots
large bowl
Colander
2 dipping bowls
Directions
Cook soba noodles in a pot according to directions. In another pot, simmer Dashi broth, soy sauce, Mirin and sugar until sugar melts remove from heat until cool or chill in advance in the refrigerator. Once soba is cooked, drain in colander and place in a ice filled bowl of water to chill noodles.
To serve: drain soba noodles from ice water and place in a bowl or a bamboo lined plate. Place the dipping sauce in a separate bowls, add some wasabi and green onions to the sauce to taste, add shredded Nori on top of the Soba noodles.
How to eat: Pull small amount of Soba noodles with chopsticks and dip into the cold Dashi sauce and eat.
