Five Cheese Calzone

Carb Load, But Well Worth It!
Difficulty: Moderate
Prep Time: 1 hour  45 minutes
Cooking Time: 30 minutes

Ingredients
2 cups fresh marinara sauce
2 cups Ricotta cheese
2 cups Mozzarella cheese, shredded
2 cups smoked Gouda, shredded
2 cups Provolone cheese, shredded
2 tbsp parsley, chopped
Parmesan cheese for topping
olive oil
1 egg, whisk

Dough Recipe
Ingredients
3 cups bread flour + dusting
1 cup warm water
2 tsp dry yeast
2 tbsp sugar
1 tbsp olive oil + greasing
1 tsp salt

Directions
To make the basic flatbread, add; warm water yeast and sugar in a clean mixing bowl, stir and set aside.  The yeast will activate in about 5 minutes and then add flour, mix with a fork, add salt and olive oil.  using your hand mix flour and then place ball of dough on a floured work surface and knead the bread dough for about 5 minutes, place ball of dough into the greased mixing bowl. cover and place in a warm location or bread proof in oven for 1 hour.  Punch down risen dough and place on a floured work surface and cut into 2 or 4 equal portions and roll out each dough ball into your desired shape and size.

Directions
Preheat oven 425 Degrees F. Prepare flat bread dough and roll out either two large rounds or four smaller rounds.  On one half of the round dough, evenly add; marinara sauce then dollops of Ricotta cheeses, top with shredded Mozzarella, Gouda, Provolone cheese.  Sprinkle with fresh chopped parsley. Brush egg on the edges of the round, fold over the other side, seal and crimp. Place on parchment lined sheet pan, brush top of dough with olive oil and bake in oven for about 25-30 minutes.  Once out of the oven, sprinkle with some Parmesan cheese.
Yields 2-4
