4 cups 00 pizza flour + dusting

1/4 tsp active dried yeast

4 tsp salt

1 tsp sugar

Cooking Tools

Large mixing bowl

Flat container with lid

Directions

In a large mixing bowl, add; water, sugar and salt and mix until salt dissolves. Using your hands to mix, add in about 1/2 cup of flour and dissolve the flour into a pancake batter like consistency. Mix in the yeast and then start to add in small amount of flour while using your hands to mix until all the flour is absorbed and the dough comes together. Dust some flour on a work bench or counter and place the dough and knead until the dough ball is smooth. If your press your finger down on the ball of dough and it bounces back, then it ready for the next phase. Place on a sheet pan, Lightly grease the bottom of pan if your worried about sticking. Place a damp cloth over the dough and allow rest for 2 hours. Remove the dough from sheet pan back onto the lightly flour dusted work bench/counter. Cut dough to form equally sized balls ( 8-10 oz.) roll with your hand until nice and smooth. Place balls into a airtight container side by side and place in the refrigerator for about 20 hour +. Once ready to use, on a slightly dusted flour surface, shape the dough balls into your pizza shape and add your sauce & toppings. Depending on your method of cooking, time will vary. If you are going to bake in the oven or a grill, use a pre-heated pizza stone.
