Roasted Tomatoes & Garlic, The Perfect Duo For This Classic Soup!

Ingredients
20 Roma tomatoes, halves
10 garlic cloves
4 cups vegetable stock or chicken stock
1 cup heavy cream
olive oil
1/4 tsp Italian seasoning
salt
pepper

Directions
Preheat oven to 420 Degrees F. Place tomato halves and garlic on a sheet pan, drizzle with a generous amount of olive oil. Sprinkle with salt, pepper and Italian seasoning and roast in the oven for 30 minutes. Remove tomatoes from oven and place all the tomatoes, garlic & juices in the blender, add in stock and blend until smooth or semi smooth. Pour soup into a pot on simmer, then add the cream and blend well and simmer for 10 minutes, adjust seasoning to taste.
