Bang Bang Shrimp Ramen

Ingredients

4 servings Ramen Noodles, cooked

8 cups chicken bone broth

2 Tbsp Miso paste

1 tsp Shimaya Bonito flavored seasoning

2 Tbsp soy sauce

1/4 cup Mirin + 2 Tbsp

2 slices of fresh ginger

1/2 cup green onion, sliced

2 Tbsp butter

1/2 tsp sesame oil

1 cup sliced Shitake mushrooms

4 fresh corn on the cob kernels

Optional Topping

Homemade or store bought shrimp dumplings, cook according to directions.

Directions

Cook ramen noodles in boiling water according to directions, drain, set aside. In a pot add; bone broth, miso paste, bonito flavoring, soy sauce and ginger. In a saute pan add some sesame oil, 2 Tbsp Mirin and mushrooms and cook mushrooms until liquid evaporates. Simmer broth on low for 30 minutes. Cook corn kernels in butter in a saute pan until tender. Place ramen noodles in a serving bowl, pour broth over ramen noodles. garnish with the toppings of the Bang Bang Shrimp, scallion, mushrooms, buttered corn and dumplings.

Bang Bang Shrimp

Ingredients

1 lb. medium shrimp, peeled & deveined
2 Tbsp cornstarch
2-3 Tbsp vegetable oil
3 Tbsp Thai sweet chili sauce
1 Tbsp Sriracha sauce
2 Tbsp mayonnaise
pinch of salt

Wok 

Directions

In a small mixing bowl, add shrimp and cornstarch. Toss shrimp in cornstarch until coated.  Heat wok on high heat and add oil. Toss shrimp in oil for a minute to sear but not full cooked.  Add in chili sauce, Sriracha sauce, Mayonnaise and a pinch of salt. Cook for additional 1-2 minutes or until shrimp is fully cooked.
